The colourful salad shown below is a couscous salad with red and yellow peppers, cucumber, celery, fresh basil and mint. Couscous is such a wonderful grain that only takes 5 minutes to cook. Couscous, like other grains, is filling and pairs greatly with vegetables.
I want to share a light, refreshing dressing that is delicious with couscous.
- 1/2 cup yogurt
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon ground pepper
- 1 teaspoon lime juice
- 1 tablespoon fresh mint, finely chopped
- pinch of sea salt
- Mix dressing ingredients in a bowl and pour over salad.
