About a year ago, I traveled to the Mayan Riviera in Mexico with my boyfriend. We stayed at a pretty cool resort, as it was situated on an ecological reserve. The grounds are literally filled with different types of trees and vegetation that really create a jungle-like atmosphere. It was such an amazing and exotic experience to say the least.
Everyday I would look forward to the freshly made salsa and guacamole. Being in Mexico, I knew I was going to get some authentic stuff. The tomatoes were so fresh and tasted amazing. They were bright, juicy and firm… the way a tomato should be! The salsa was simple, as it consisted of tomatoes, onion, and cilantro. I am not a huge fan of the ‘soapy’ taste of cilantro, but it really did go perfectly in this refreshing salsa. The guacamole was delicious and creamy. Avocados are high in healthy fats, and are packed with vitamins and nutrients, so it definitely put me at ease knowing both these dips were a healthy choice.
The resort was located right next to an ecological park that we visited on one of the days. To get to the park, we took a cute gondola ride through one of the connecting rivers. The park was filled with different animals and trees, and it also featured many dark, underground caves and pathways. We were able to see the amazing and endangered wildlife as well. It was quite the experience, as I can definitely say it was the highlight of the trip.
We even got to experience walking through a bat cave filled with real bats! This has secretly been on my bucket list, since I have an odd fascination with bats and their eerie-ness. We were asked not to use the flash on our camera, as the bats would get scared…But I had to capture this the moment…
One of my favourite parts of the trip was when I was able to just sit and watch a bunch of flamingos. It was such a surreal experience because these birds are so striking and absolutely fascinating. Seeing the way their long, skinny legs bend and the way their long necks move around, was pretty interesting. Flamingos are truly unique and it’s a shame these beautiful birds are endangered. I could have sat and watched them all day!
After sunbathing for a few hours, my boyfriend and I decided to walk along the shore and do some exploring. We kept walking and walking for about 2 hours and found a lovely secluded beach. It was so utterly peaceful. The breeze and sound of the waves were perfect.
Everyone needs to relax and get away sometime.
